Title: Tomato Herb Dressing

Yield: 1 Servings

3/4cCanned plum tomatoes with juice (about 2 tomatoes) OR 3/4 cu
1/4cFresh lemon juice OR cider vinegar
2 Cloves garlic, minced or pressed
2tbChopped scallions, chives or fresh parsley (singly or in com
1/2tsSalt
1/4tsDried thyme or oregano Ground black pepper
2 Leaves fresh basil (Optional) Tabasco or other hot pepper s

Place all of the ingredients in a blender and whirl them until smooth. Store chilled in a covered container. This dressing will keep for about 2 weeks.

Makes 1 cup.

Per 2-ounce serving: 15 calories; 0.7 g protein; 0.1 g fat; 3.6 g carbohydrate; 282 mg sodium; 0 mg cholesterol.
